- 1 Lb Lobster
- 3 Tbsp Mayonnaise
- 1 Tbsp Lemon Juice
- 1 Tsp Dijon Mustard
- 1 Tbsp Chive
- 1/4 Tsp Salt
- 1/4 Tsp Black Pepper
- 4 Hot Dog Buns
- 2 Tbsp Butter

- Finely chop the chives and celery.
- In a medium bowl, combine the mayonnaise, lemon juice, Dijon mustard, chives, celery, salt and pepper.
- Gently fold in the cooked lobster meat until evenly coated. Avoid overmixing to keep the lobster pieces intact.
- Heat a skillet over medium heat.
- Butter the outside of each bun and toast until golden brown and crispy.
- Fill each warm bun generously with the lobster mixture.
- Garnish with parsley or extra chives and serve with lemon wedges.
- Tips: * For a classic Maine-style roll, keep the dressing light so the lobster remains the star.
* Add a little melted butter over the lobster just before serving for extra richness.
* Serve with kettle chips, coleslaw, or a simple cucumber salad.
