Wilting fresh spinach with a warm dressing right before serving transforms it into something special. Crisp bacon and chopped hard-boiled egg add savoury richness, while a garlicky red wine vinegar dressing, poured hot over the leaves, coats every bite with tang. It is an old-school steakhouse side that comes together at the last minute and disappears just as fast.
