- Take one cup of Pancake mix
- Add 3/4 cup milk, 1 large egg, 2 tbsp. melted butter, 1/2 tsp vanilla extract (optional)
- Stir together until just combined; don't over mix.
- Pour 1/4 cup batter onto a preheated, lightly greased skillet over medium heat.
- Cook until bubbles form on the surface and edges look set.
- Flip and cook for another 1-2 minutes until golden brown
