- In a mason jar or airtight container, combine the oats, Greek yogurt, milk, grated carrot, chia seeds, maple syrup, vanilla, cinnamon, nutmeg, ginger, and salt.
- Stir until everything is well combined.
- Fold in the walnuts, raisins, and coconut, if using.
- Cover and refrigerate for 6–8 hours or overnight.
- If making the cream cheese topping, mix the cream cheese, Greek yogurt, maple syrup, and vanilla until smooth.
- Before serving, stir the oats and add a splash of milk if needed for your preferred consistency.
- Top with the cream cheese mixture, a sprinkle of cinnamon, chopped walnuts, shredded carrots, and a few raisins for a classic carrot cake finish.
Tips:
- Prepare several jars at once—they'll keep in the refrigerator for up to 4 days.
- Finely grate the carrots so they soften overnight.
- For extra protein, add a scoop of vanilla protein powder and a little extra milk.
- Add the nuts just before eating if you prefer them extra crunchy.
