Champagne turns an ordinary chicken dinner into an occasion. Floured pieces gently browned in butter braise with onion, carrot, and bubbly, then finish in a silky cream sauce dotted with sweet white grapes. Spooned over long grain and wild rice, it is refined, a little decadent, and deceptively straightforward. Save it for the night you want dinner to feel like a celebration.
