- Preheat the oven to 400°F (200°C).
- Grease an 8x8-inch baking dish or a 9-inch cast iron skillet.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, milk, melted butter, honey, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Pour the batter into the prepared baking dish.
- Bake for 20–25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let cool for 5–10 minutes before slicing.
