- 3 Tbsp Lemon Juice

- Preheat oven to 400 F.
- Slice the top off the garlic head to expose the cloves.
- Drizzle with 1 tablespoon olive oil and wrap in foil.
- Roast for 35-40 minutes, until the cloves are soft and golden.
- Let cool slightly, the squeeze the roasted garlic from the skins.
- Prepare the hummus:
- Add the roasted garlic, chickpeas, tahini, lemon juice, olive oil, salt and pepper to a food processor.
- Blend until smooth.
- Add cold water, 1 tbsp at a time, until hummus reaches your desired consistency.
- Taste and adjust seasoning if required.
